To understand why, it helps to know what staleness actually is. Most people assume stale bread has simply dried out from lost moisture. In reality, staleness is primarily caused by a process called starch retrogradation.
When bread is baked, the starches in the flour absorb water and melt into a soft, flexible structure. But as soon as the bread cools, those starch molecules slowly begin to re-align into rigid crystalline structures. As they crystallize, they lock up water molecules and squeeze them away from the bread crumb, making the slice firm, dry, and crumbly.
Here is the catch: starch molecules recrystallize fastest at cool, above-freezing temperatures—specifically between 32°F and 50°F (0°C to 10°C). That is the exact temperature range of a standard home refrigerator.

How to store your bread instead:
- For short-term eating (3–4 days): Keep room-temperature bread in a bread box, paper bag, or sealed plastic bag away from direct sunlight and heat sources.
- For long-term storage: Freeze it. Freezing stops starch crystallization entirely because moisture is locked in solid ice. Slice your loaf before freezing so you can pull out individual slices and toast them directly from frozen.
