Why does a cast-iron pan sometimes come out of the oven sticky, patchy or strangely dull after you “season” it? 🍳

Seasoning isn’t simply oil being left on the surface. When a very thin layer of cooking oil is heated, it reacts with oxygen and forms a hard, plastic-like coating that bonds to the iron. That coating helps protect the pan from rust and gives it a smoother, more non-stick surface.

The important word is thin. If too much oil is left behind, the excess may not polymerise properly. Instead, it can remain soft and sticky, collect dust and become uneven. A good rule is to oil the pan, then wipe it as though you’re trying to remove all the oil again. The surface should look lightly satin-like, not wet.

After cooking, wash the pan with hot water and a little mild dish soap if needed. Soap doesn’t instantly destroy properly bonded seasoning—a common kitchen myth. Dry the pan thoroughly, because bare or damaged spots can rust, then rub on the thinnest possible film of oil before storing it.

One more useful detail: seasoning is not a one-time treatment. It gradually develops through repeated cooking and occasional oven seasoning, and acidic foods such as tomatoes can wear at a newer or weaker layer more quickly.
